Moving right along to… LATKES! Lol, jk. I don’t even want to compare these potato pancakes to latkes because I know the moment I do I’ll get 30 comments on how every bodies mother and their grandmother used to make the “best” latkes in the history of mankind.
I’ll just be calling these babies “potato pancakes”. Simple, and non-controversial.
This dish was inspired by a meal I ate almost 3 years ago when I first moved to the beach. I used to hit up Paul Bakery for croissants and macarons (pre-Primal days) because I felt worldly and sophisticated. Ya know, small town girl in a new (not so big) city. One breakfast I ate these amazing thick potato pancakes with some type of mushrooms and a fried egg on top. Talk about savory overload.
Since then I’ve come to like thinner crispier potato pancakes. I rarely eat hashbrowns for breakfast, but when I do I go all out.
This is probably the part where you yell “BUT POTATOES AREN’T PRIMAL/PALEO/BLAH BLAH BLAH”. And I pull out my favorite weapon against the Paleo Police by showing you this link. See, white potatoes aren’t nearly as bad as they are made out to be. My logic has always been “Why is it ok for everyone to eat sweet potatoes at EVERY Paleo meal, yet once in a blue moon I eat a white potato and everyone goes bananas?” So not fair. So I’m sticking to my guns… and rolling in
latkes potato pancakes like a boss.
