I’ve been holding my breath waiting for this new batch of fermented curtido to hurry the hell up. I go through fermented veggies like toilet paper and then curse myself for not making multiple batches at a time. 2-3 months is a long a** time to wait for a finished product. But it’s SO worth it.
Curtido is a Salvadorian relish made from cabbage, carrots, onions, and spices. It is typically fermented for 3-5 days. This is great if taste is all you are going for, but letting it go for 2 weeks will increase the probiotic benefits greatly and is probably the perfect compromise between health benefits and convenience. For the maximum in gut healing probiotics, you’d want to let it go through a full ferment which is more like 8-10 weeks. That’s what I did.
Curtido usually accompanies pupusas, a corn patty stuffed with cheese and meat. Needless to say, the night we finally busted out the finished curtido I got my homemade pupusa on. #glutenfreecheatmeal #howyoudoin
If you’ve never fermented food before, a great resource that I can’t recommend enough is Sandor Katz’s Wild Fermentation . There really isn’t a whole lot of information about fermentation out there, and this book really helped me get a handle on the concept and improve my confidence. Sandor is a guy who definitely marches to the beat of his own drum and besides being highly informative, the book is also very quirky and a lot of fun. His follow up book, The Art of Fermentation is great too, but that is more like a sequel that goes into the science, history, and culture of fermenting and focuses less on actual recipes, so between the two, Wild Fermentation is the better beginner book. I ferment curtido in airlock Fido type jars, which are pretty much idiot proof. An open mason jar would work too, but then you have to deal with skimming mold off the top. (Sounds SO exhausting and repulsive at the same time.) TJ Maxx and Ross sell Fido Jars for about $4 a jar.
