This is my version of The Fresh Market’s amazing Strawberry Pillows. Yes their version is complete with giant croissants instead of grain-free cake, and yes they also have about a pound of powdered sugar on top (and Bavarian cream inside), but let’s not get caught up in the differences.
I’m more concerned with the feeling I get when I dive straight into these layers of creamy, strawberry, chocolately bliss. Looks like I have no excuse for a “cheat meal” now.
Lately I’ve been avoiding posting recipes with dairy in them. Coconut milk does such a good job at filling the dairy void that it seems silly to use dairy without a good reason. So consider these Strawberry Pillows a good reason to pile on mounds of The Real Deal whipped cream. I won’t tell on you, promise.
I haven’t tried making these with whipped coconut cream from coconut milk, but if you wanna try it- go for it. I’m sure they will come out more than delicious. Personally, I was going for a lighter, yet thicker consistency for the whipped cream in between layers of cake. If it is too liquidy, then it will seep out the sides.
