Did you guys know that I do product reviews? Jay from You Fresh Naturals sent me a jar of delicious Maple-Vanilla Coco-Nut Butter last week, and it’s practically gone. HOLY MOTHER OF NUT BUTTERS, that stuff is amazing. Of course I couldn’t just eat it all from the jar, I had to make a recipe with it.
My logic went somewhere along the lines of- Hm, maple-vanilla reminds me of pancakes. Pancakes remind me of bacon. Bacon reminds me that anything tastes better with bacon.
Thus these Maple Coco-Nut Bacon Pancakes were born. I’m sure there are a ton of versions out there on the internet already, but I’ve been severely lacking in the breakfast recipe department, and these taste amaze-balls. So shut up and deal with it.
Don’t I seem so much less stressed? (I keed!)
I don’t know what my deal has been lately. I make all these plans to devote my days off to chores and recipe developing, and then I go blow it in front of the computer all day. Erg. In all honestly, I haven’t been keeping up with Me-Time. Lot’s of stressful running around and then vegging out as a result.
So this past week in the midst of Fashion Week here on the beach, I took time off for my 24th birthday and went to a hardcore rock concert with my sister (a concert I’ve been waiting to go to for 11 years!). It was so awesome, and now I get to check that off my bucket list.
Then on Wednesday I went to my gym and hung out in a Turkish Bath house before going to Massage Envy to get an hour-long massage. Now that’s some damn good ME TIME.
