I swear I eat food other than dessert. I know it doesn’t seem like it, but trust me. I like to throw in the random egg dish and crock pot meal from time to time.
Actually as soon as the holidays are over I plan to get off my sugar-coma a** and get creative with entrees and snacks. I promise.
That being said, I can’t tell you how long it’s taken me to find a good grain-free cobbler dish. I was always disheartened at the grainy ash-like crumb topping from promising recipes on the web. Hello, it shouldn’t be that hard.
Finally I came across a recipe that used crunchy almond slivers to get that good crunch and it JUST MADE SENSE. Duh Rachel.
This topping would really go great over any pie filling. I can honestly say that I’d eat a fruit cobbler over chocolate or cupcakes any day. And that’s saying something because I used to be the queen of cupcakes.
True story: I changed my last name on FB to McCupcake for over a year once. It was that bad.
