Well it may be National Donut Day here in the US, but I’ve got my eye on bigger and better things: Paleo Cinnamon Buns! The only way I’d ever pass up a donut is if it were for a sticky cinnamon bun. #Truestory
Did anyone know that Dunkin Donuts just revealed their new DONUT SANDWICH?! Shut the front door. I’m not sure whether to gag or cry from missing out. Somebody please tell me you tried it and found it to be repulsive and offensive. Please.
Anyway, I’ve been struggling to find a good paleo cream cheese icing recipe. Pretty much every carrot cake recipe on the internet claims to be paleo, and then when I read through the ingredients they sneak real cream cheese in there. Erm, HELLO, why must you lie to me?
Then yesterday I was fiddling around in the kitchen, and quite literally made this fabulous icing accidentally. I love it when that happens. The key is lemon juice- to mimic the tang of cream cheese. INGENIOUS. I bet this has even been done before, because at this point in the paleo bloggosphere there aren’t many original ideas. But it’s the first time I figured it out, therefore I’m giving myself a pat on the back. Yep. Kudos Rach.
Whoever thought of Cakes in a Mug is pretty much my hero. I’m not saying I indulge in one of these every day, but they are a good easy treat to have up your sleeve. This is more of a cinnamon cake than a bun, but let’s not get technical. Geez, what do you people want from me?! An awesome icing recipe AND a perfectly rolled up grain-free bun that sits snugly in a mug? I don’t even know if I have the energy to imagine the amount of effort that would take to make only ONE serving.

But at least I got to hang out and look supa fly in this fuzzy white bath robe! Jk, it felt like an old rug. But it LOOKED fuzzy, and that’s all that matters
EDIT: Some people are asking me about coconut manna. Coconut Manna is just dried coconut that has been pureed in to butter. Artisana is the best store bought brand and that’s what I used in this recipe. Nutiva (they call coconut butter “coconut manna”) sells a relatively reasonably priced twin pack online. But the cheapest and best option is to just make your own.
