SHOCKING that I’m writing a meat post. I know.
Yes I run a Primal recipe website, but generally I post grain-free recipes that involve snacks, bacon, and icecream. I bet you guys didn’t even think I could cook meat without the use of a crock pot.
But you were wrong. I always eat delicious cuts of steak or a meaty sausage dish- I just don’t blog about it. Because how many steak recipes are up on the internet? I mean really.
This burger, on the other hand, is worthy of writing about. If you guys don’t know what Fuddrucker’s is, then let me paint a picture for you: The “World’s Best Hamburger” on a light buttery bun, alongside fries and a cold chocolate milkshake. YES PLEASE. Oh yeah, and arcade games are involed.
I haven’t been to Fuddruckers in years, but I recently came across this recipe from Todd Wilbur at Top Secret Recipes. I wanted to see if it could live up to the “World’s Best Hamburger” name, and it came pretty close! (I’ve been spoiled since with gourmet wagyu burgers topped with fois gras and truffle oil, so the bar has been set pretty high.) I paleo-fied the recipe using maple sugar instead of brown sugar and opted for a lettuce wrap instead of a fresh-baked bun. Roasted jalapenos, bacon, and my sweet onion marmalade made for the perfect toppings.
In case you are wondering why I chose to use a “non-nutrient dense” lettuce, like iceburg, for my lettuce wraps, it’s simple: I LIKE THE CRUNCH. Yes it’s blasphemy that I don’t use something healthier like romaine or kale, but #sorrynotsorry.
Also, in case you’re wondering what maple sugar is, it’s basically maple-flavored crack. Maple sugar is made by boiling off the water of the sap from a sugar maple tree. It is a much tastier and more environmentally conscious alternative to coconut palm sugar.
