Happy Thanksgiving! I hope you guys had a great time with your loved ones. I know this year I was especially thankful I had a small intimate gathering with my mom, sis, and bf. It was good to get off this island for the day.
It’s 10pm and I’m still so uncomfortably full. I was doing so well until an hour after we ate and then slowly it seeped in that perhaps I ate one too many servings of mashed potatoes and ganache pie. Ugh. 4 hours later and I’m still sitting here sick to my stomach at the turkey stock cooking away on the stove. I BARELY even pigged out too. Barely. Believe me, I’ve been known to eat my whole body weight in stuffing. Not really. But you get the idea. My new primal stomach just isn’t the same.
Since I was in charge of bringing desserts today, the bf made his famous Peanut Butter Chocolate Ganache pie and I was supposed to make a paleo pumpkin pie. Then I realized I only own one pie plate, which is stupid, and he already had first dibs. Which was also stupid. Soooo I just used 3 ramekins to make these paleo pumpkin cups.
I’ve seen these paleo pumpkin custard recipes floating around the internet, all pretty much the same. So this is my rendition of it. Usually I’m a crust kinda gal, but the crunch from the pecans was a good last minute substitution.
I know it might be hard, but let’s make a deal and try to be as loving and grateful for life and others TOMORROW as we were today.
