Primal Pizza Bites

Before you start thinking I’m an awesome genius, I must give credit where credit is due. I was fiending for pizza one night and came across this post from Health-bent.com

There’s something so irresistible about the smell/taste of spicy marinara sauce and cheese. Since imitation dough can never cut it for me (yum, cardboard rice crust anyone?) I just usually stay away from pizza, period.

But like I said, I was a woman on a mission for something that could satisfy my craving without weighing me down. I can report to you that this recipe is the cat’s pajamas. Tried & tested.

Primal Pizza Bites

Ingredients

  • 1 package of Applegate Farm’s pepperoni
  • Small can of organic pizza sauce
  • Shredded cheddar, from grass-fed cows (or even ricotta)
  • Dash of cayenne pepper, baby
  • Additional toppings like black olives, mushrooms, ham, pineapple, or peppers (cut super small!)

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Lay large pepperonis on a foiled cookie sheet. Bake for 8 minutes, flipping over halfway through. Crisping the pepperoni up first is crucial- or else it will be limp [insert tasteless E.D. joke].
  3. Blot excess grease with paper towels, because REALLY who needs all that shiz?
  4. Drop ½ tbsp of marinara sauce on each pepperoni. Spread.
  5. Layer with cheese and additional toppings.
  6. Bake until heated through to melted goodness.
