Coo-Coo for coconuts? Damn straight. I pretty much eat some kind of coconut product multiple times a day- whether it be coconut manna, coconut milk, or spoonfuls of coconut oil. I even eat unsweetened large coconut flakes as a snack, which my coworkers think is bizarre because it makes me look like I have an eating disorder. “No thanks, I’ll pass on the Krispy Kremes. I’ve got a zip lock baggie of COCONUT FLAKES!” #nom
But ohhh man, seriously those flakes are a great slightly sweetened snack even if my throat gets all dry and grainy. Whatev.
So this recipe is really delicious to me no matter what the BF says about it. He gave it a “meh”, which is stupid because it’s the perfect side dish. It’s the first time I remember eating a forkful of onions without noticing they were onions- The Day Rachel Outgrew Her Fear of Onions. So maybe it just has a special place in my heart.
