Something you should know about me: Rationalization is my best friend. She enables me to sleep soundly at night. When I dig myself into a hole, she helps me climb out. Oh, that wonderful Rationalization.
Example: I’ve never been a huge fan of sweet potatoes, but everyone in the primal/paleo world are always hopped up on them. I on the other hand LOVE yuca (I better since I live in Miami). So sometimes when my conscience feels guilty for eating too many yuca fries, good ‘ol Rationalization steps in and tells me that it’s ok. I’m golden. Because, really, I’m not eating sweet potatoes after every WOD (not that I’ve ever WODed before) and I’m free to entertain other starches instead.
She’s so sweet to me.
Ok moving right along.
Yes in this recipe I use frozen yuca. I have no qualms about using frozen vegetables, roots, fruits, or seafood. I will not be ashamed about it. I have no idea how long that raw yuca tube was sitting in that dank fridge at Publix, nor about how long that bag of raw spinach was sitting in the cooler at Costco.
I CAN testify that the frozen raspberries I buy are the most delicious berries I’ve had since eating them on the side of a highway when I lived in Maryland.
Do I sound defensive?
