You know how I do that thing where I post a recipe after months of being AWOL, and then I swear that I’ll post more regularly and get back in the game? Yeah, well I’m not doing that this time. Obviously I’ve been having writer’s block, or maybe it’s just a loss of interest in blogging. But I get wrapped up in everyday life, and then in the back of my mind I worry about how I’m the worst blogger ever because I BARELY EVEN BLOG DUH, and then it perpetuates this weird cycle until finally I break down and write a blog post.
So yeah, that’s kind of where I’m at. Just to give you a recap of what’s been going on in my life:
-I was having really bad kidney stone problems for weeks- but I ended up passing the stone 2 hours before scheduled surgery! Hallelujah. Kidney stones are hereditary in my family, and this wasn’t my first go-around with them. BUT it was the longest drawn out one yet- and I’m so happy to be in good health again! I wrote a whole blog post about it and then never posted it, because re: above intro.
-I’ve submitted the final edits of my cookbook collaboration for The Ultimate Paleo Cookbook. It should be released in no time now! I’m thinking a mini book tour is in order. OBV.
-I’ve put CrossFit on hold for the summer, since doing WODs without AC in 95 degree Miami is brutal on my rosacea. In the meantime I’ve got a badass gym routine down pat, so I’m still building muscle.
-My review copy of PaleOMG’s new cookbook, Juli Bauer’s Paleo Cookbook, arrived in the mail and I’m DYING to get in the kitchen to start making some of her treats. Stay tuned on my Instagram account for an awesome Giveaway of her book this coming Monday.
-I have a boyfriend now. He’s a total winner.
-I just recently went to Maryland to visit my whole family. We stayed up in the cabins at New Germany State Park (western Maryland) and avoided getting eaten my bears. SUCCESS. There was no wifi there, so we had to revert back to the 1800’s and actually interact with each other without staring at our phones. Highlights: Paddle boarding on the lake, hiking to Swallow Falls, totally non-Paleo s’mores, and late night Cards Against Humanity with the cousins. I won of course. It was brilliant.
-I’m focusing my efforts on spending less on frivolous things, and saving more money. Because: adult.
-My morning meditation practice has been on point lately. My day runs so much smoother once I get right with the world. As soon as my eyes open I brew some coffee in my French press, read through my daily meditation readings, meditate for a whole 10 minutes (sounds easy, but it’s still hard for me), journal for 5 minutes with coffee in hand, and then say a little prayer. It’s that simple.
Ok, enough about my life. As summer comes to an end for most of the US, we in Miami are still sipping beach cocktails- with the holidays far far from mind. I went into Joanne fabrics this past weekend and got hit with my first dose of cinnamon autumn paraphernalia. It messed me up. Guys, I’M NOT READY FOR THIS. So naturally I ran home and made myself a tropical snack as a counterbalance. When I went to Austin for PFX, I attended an awesome pot luck thrown by Charissa from No Cook Paleo. One of my favorite dishes was the most simple: Prosciutto Pineapple Spears. I’m pretty sure I ate half the tray that night. PaleYOLO.
This recipe is so simple, it almost feels silly for posting. But it’s been one of my snack staples since that night at PFX, and it’s a perfect #nocookpaleo lunch. It’s also great to bring to picnics or parties, and even the kids can help assemble these cute lil’ spears.
