This past September I visited my fam in Maryland. Usually I get to visit once a year, and now that I have a new seasonal job at a hotel I won’t be able to visit for Christmas. This depresses the hell out of me because Miami Beach is stupid for Christmas. Nobody puts up Christmas lights on their apartments because, well, it’s an apartment. And it’s usually 85 degrees outside, which is just WEIRD.
So September it was. Awesomely enough it was the beginning of apple season so I got to visit the local apple orchard with my dad and pick a bushel of fresh apples. Yeah, we do super wholesome activities like picking fresh berries and fruits, white water rafting, and go on hikes. Side note- I totally screwed up my left knee going on a hike up in Cumberland. Because there’s all these… hills… and things up in the mountains. What the ef. It still hurts doing low lunges in my Vinyasa flow classes but it was worth it. Quality bonding fam time- ya can’t beat it.
Anywho, so we literally had a bushel of three different types of apples (honeycrisp being my favorite) which meant I found lots of cool recipes online. I made a paleo crock pot apple crisp which turned out oddly salty and repulsively mushy. Nixed that recipe. Also tried a paleo-esque cobbler. It was meh. My favorite of the bunch was this simple easy sautéed apple recipe. It goes great as a holiday side dish or even as a treat for dessert. I ate multiple portions for both sides and desserts because I was on vacation and yadda yadda justification/rationalization. Whatev.
The only annoying thing was constantly peeling apples upon apples for all these dishes because I’m horrible with a peeler. So my pops came to the rescue.
